Combine dry ingredients. Whip 2 eggs; add all the wet ingredients to flour mixture.
Place dough in warm oven to rise for 1 hour. On clean, floured countertop divide dough into 2 parts. Divide each part into 3 parts and braid dough. Flour the bottom of each loaf and place both loaves on a large, greased tray. Whip the remaining egg and paint onto the braided dough. Sprinkle seeds (sesame or poppy seeds) on painted dough. Let rise for about 40 minutes. Remove dough (carefully) from oven and heat oven to 350 degrees. Place dough back in hot oven and cook for 30 to 40 minutes, rotate at least once. Makes 2 large loaves of challah.
